Zoo Biscuit Food Tarts

30 MINUTES PREPARATION - 20 MINUTES COOKING

Ingredients

MAKES 16 TARTS
30g unsalted butter, plus extra to grease
80ml golden syrup
1tbsp apricot jam
110g dark soft brown sugar
1 packet of ready-rolled sweet shortcrust pastry
1 egg, beaten
30ml double cream
Pinch of salt
80g unsalted peanuts, roughly chopped
16 LEIBNIZ ZOO BISCUITS, to decorate

Method

  1. Preheat the oven to 180°C/360°F/Gas Mark 4 and grease the wells of a tart tray or muffin tin.
  2. Heat the butter, golden syrup, jam and brown sugar in a saucepan until boiling. Stir continuously. Remove from the heat and leave to cool until just warm.
  3. Meanwhile, roll out the pastry on a floured surface and cut out 16 circles with a fluted cutter. Place the circles into the prepared tin.
  4. Now add the egg to the cooled syrup mixture. Add the cream and salt and stir.
  5. Place the peanuts into the tart cases and fill with the syrup and egg mix.
  6. Bake in the oven for 15 minutes, cool in the tin for five minutes, then decorate each tart with a LEIBNIZ ZOO Animal. Allow to cool completely on wire racks, then serve the hungry animals just like at feeding time!
